Grilled Shrimp with Garlic Butter

Ingredients

Vermont Creamery Unsalted Cultured Butter - 82% Butterfat
½ cup divided

1 ½ teaspoons fresh garlic

1 pound raw shrimp, peeled, deveined, tail-on

1 lemon, cut into 3/4-inch slices

1 tablespoon chives

12 inch wooden or metal skewers
Directions
- Heat gas grill to medim-high or charcoal grill until coals are ash white
- In a small saucepan or skillet, melt 1 tablespoon butter over medium low heat.
- Add garlic and cook 1-2 minutes or until garlic is translucent and just begins to color, being careful not to burn.
- Reduce heat to low and add remaining butter. Heat until just melted. Remove from heat. Reserve 2 tablespoons clear butter mixture (spoon off from top of melted garlic butter) for basting
- Skewer shrimp. Put skewers and lemon slices on the grill. Grill, basting with reserved butter mixture, for 2-3 minutes a side or until shrimp is opaque, firm and cooked through. Platter grilled skewers and lemon slices and spoon additional reserved garlic butter for serving. Sprinkle with chives. Serve with individual ramekins of any remaining reserved garlic butter (not used for basting).
